About Maxime (Founder of Coeur Sauvage):

Maxime… French by birth, Scottish by heart

I’ve always loved nature, though I never imagined it would become my life. Foraging became my calling after a life-altering experience: cancer. As traumatic as it was, it gave me clarity. With my wife’s support, I chose to follow my passion.

Foraging came unexpectedly. When I told my wife, “Darling, I’ll earn a living picking mushrooms,” she was stunned—but it worked. I feel at home in the wild and equally comfortable in the kitchens of my chefs and on the phone with them.

To me, chefs aren’t just clients—they’re friends. I’m deeply honoured by their trust. I’m proud of how far we’ve come and excited for what lies ahead.

About Sam (Course Leader of Coeur Sauvage)

Sam Worrall… Born in the city, made in the woods.

Though born in London, my heart’s always been in nature. I loved helping at my parents’ allotment and walking the countryside. After moving to Glasgow for university, I found my calling in hospitality, not literature.

I embraced Scotland’s gin revolution, studying distilleries and botanicals, falling in love with their stories. My passion for teaching flourished through gin tastings. Whisky’s poetry drew me further in.

Using foraged ingredients in cocktails led me toward sustainability and folklore. Now, I share my discoveries with chefs, bartenders, and curious minds, helping others see the magic in the land around them.
