These short-form courses are a great introduction to some of the plant species found at the foreshore and the edible seaweeds you can find along Scotland’s coastlines.
Scotland’s coastlines are under great threat from pollution and mistreatment. In teaching understanding of the wealth of biodiversity that depends on them, we hope to help people co-exist with the coastline in a way which helps everyone.
Coeur Sauvage are experts with years of experience in supplying the UK’s finest restaurants with premium, wild, Scottish produce, and work alongside councils and landowners to ensure sustainable practices. We would love to share this expertise with our guests to promote foraging as a hobby and lifestyle available to all!
Short form coastal foraging walks will take place over two to three hours, as we take our time to enjoy the beach and the things which call it home. Wild trail snacks will be provided!

Sam
Sam is the natural bard of the company. He joined in 2021. Sam was a bartender and competitive mixologist in Scotland’s exciting gastronomical and cocktail world; the Coronavirus pandemic allowed him to assess hospitality’s impact on his health and well-being. He had taken great solace in the quiet of the forests in contrast to the chaos of the bar and found inspiration in the new flavours he was discovering and so, when the opportunity to join forces with Coeur Sauvage, Sam jumped at the chance.
Sam is a determined fungiphage, and well on his way to having identify and eaten 100 species of fungi. The child of two educators and with previous experience running whisky and gin tasting sessions, Sam is more than ready to share his experiences in the field of foraging.
