Medlars offer chefs and home foodie a rare opportunity to work with a heritage ingredient that brings complexity, narrative, and seasonality to a dish. Once bletted, the fruit develops a silky purée with layered flavours reminiscent of spiced apple, fig, and molasses, making it ideal for refined applications.

Culinary advantages for professional kitchens:

  • High aromatic depth suitable for pâtisserie, terrines, and game pairings.
  • Natural pectin that sets beautifully in jellies, glazes, and plated desserts.
  • Distinctive provenance — a medieval fruit that adds storytelling and terroir to menus.

Medlar purée works elegantly with roasted meats, aged cheeses, and warm spices. Its subtle acidity and caramelised notes make it a powerful but gentle component in composed plates.
