The Dried Black Fungus (Auricularia polytricha) is both an edible mushroom and an important traditional ingredient used in Chinese medicine.
Although it shares many characteristics with its European cousin the “Jelly Ear Mushroom” (Auricularia auricula-judae), Dried Black Fungus is technically different.
Black Fungus needs to be reconstituted in warm water prior to be eaten and is a very popular ingredient in Asiatic cuisine.
Although it has a very neutral flavour profile, Dried Black Fungus are a super cool mushrooms to work with. Essentially it will acquire the flavour profile of whatever stock/aroma you are cooking it in.

Fried rice
When we are making our own fried rice version, we first cook/reconstitute the Black Fungus in a nice stock and then cut in slices before adding it to the fried rice. The magic happen once you crunch into the Black Fungus as the flavour it has acquired during the cooking process in the stock is released in your mouth. It is like a little flavour bomb that contrasts well against the overall neutral taste of the rice.
Turkish Delight
One could also rehydrate the Black Fungus in Cointreau or other orange liqueur. Once reconstituted smother it with dark chocolate. When the chocolate has solidified, it is ready. Black Fungus has a structure akin to Turkish Delights and the Cointreau and chocolate combination is outstanding!!
