Dried cep (Boletus edulis), also known as porcini mushrooms, are a staple in Italian and French cuisine. Ceps are praised for their flavour, which intensifies during the drying process, and their versatility. They are commonly used in soups, stews, risottos and sauces as even a small amount added to a dish lifts it to a new level.
Dried ceps can be easily reconstituted by soaking in hot water for 20 minutes. The infused water can then be used as a great mushroom stock in subsequent cooking.
Dried ceps can also be ground into a fine powder and added to sauces, stock or gravy, as well as sprinkled on top of the dishes for that rich umami flavour.
