Fresh Cultivated Morels

In the world of edible mushrooms, morels are a welcome sight as they signal the start of spring.

For the foragers, Morels are one of the most prized mushrooms due to their rarity (in fact 70% of the foraging team at Coeur Sauvage still have not been able to find a morel in the wild!!)

For the chefs, Morels are one of the most desired mushrooms as they provide formidable opportunities for both taste and creativity.

In our humble opinion the quality of the cultivated morels is improving year on year, reaching incredibly high standards and uniformity nowadays. We can notice a shift, from our pedigree chefs, in preferring the cultivated morels over the wild morels.

A word of caution

Remember to well cook your morels. They contain a natural toxin which can cause some gastrointestinal distress if eaten raw. This toxin is destroyed when properly cooked.
